Switch with 3.0&3.1 handling??

Are there switches that will handle Uni3.0 and 3.1 signalling on the fly
and at the same time?

If there are, how are they doing it.  I don't see how a switch can tell
what UNI is coming across.  None of the messages have that (section 5 of
UNI specs)
