Best thing to do is to start with looking at tutorial in MPLS resource center.

Go to MPLS Overview And Tutorials section and you will find a lot of good stuff for beginners.

A good tutorial by William Stallings at Cisco website take a look and it will a good place to start with.

Look for other white papers on MPLS and after spending some time with these tutorials you may want to start with RFCs.
