If the requirement is to set up varied class of service for different customers, you could probably look at a few options. But a lot depends on the nittygritties of your topology, and exact requirements.

In my experience, the simplest method of ensuring differential cos for MPLS VPNs, has been with using the "EXP" bits. You could mark the customer at the edge associating the VPN interface with a particular output queue. The output queue / forwarding class would have the necessary parameters, such as transmit rate, priority etc.. etc configured.

Further the EXP bit setting in the VRF label can be copied into the RSVP label. This would ensure that all transit LSRs would act on the EXP bit setting, to provide differential actions on transit MPLS traffic. You could either use a single LSP to carry all the traffic, or you could have multiple LSPs, each carrying its own class.
